So far, I haven't eaten meat in almost five days, and it's actually been quite easy. I never really crave meat so much as eat it because it's much simpler and requires less planning. However, I've already found that making meatless dishes can be not only rewarding, but also tasty! I had eggplant sandwiches for dinner yesterday and leftovers for lunch today. Eggplant contains alot of nutrients and less fat and cholesterol than meat, and the cheese and green veggies provide calcium and protein and iron. The squash casserole from the other night was great. Today, I made vegetarian chilli, and it was honestly better than alot of beef chilli I've had. I added extra chilli powder to it, and it could have used more tomatoes, but other that that it was great and provided enough for two dinners and several lunches. I feel completely healthy so far, and I don't think I've lost any nutritional intake as of yet. In fact, I feel a bit better at some times, because I don't have the heavy meat products weighing me down or filling me with cholesterol.

As for the composting experiment, I'm definitely going to try vermiculture (worm composting). It seems like alot of fun and a good way to keep things interesting. I've researched it some this weekend, and it doesn't seem like it will take much effort or time after the initial setup, so it will likely fit into my schedule.

At the farmers market and the cooperative grocery, I've been speaking with the farmers and employees and thanking them for their services. I tell them I'm trying to support local business and growers, and they're always very thankful for that. It's becoming increasingly obvious to me how important it is to celebrate and support local communities. Especially since I'm a believer in a not-too-distant peak in oil production, I know that sustainable communities without much need for outside cooperation are essential. Without an ability to sustain itself, a community won't last long without cheap oil or a viable alternative.
